Elaichi overnight oats

You need

  • ½ cup (40 g) rolled oats
  • ¾ cup cold milk
  • 2 tbsp curd
  • 1 tsp honey or jaggery powder
  • Pinch of elaichi powder
  • Banana or apple, 5 almonds to top

Method

  1. Mix oats, milk, curd, sweetener and elaichi in a jar.
  2. Close and refrigerate for 6–8 hours.
  3. In the morning, stir, add a splash of milk if thick, and top with fruit and chopped almonds.
Tip: Make 3 jars on Sunday night. They keep well for 3 days in the fridge.

Recipe 02

Moong sprouts chaat

⏱ 8 min (sprouts ready)💪 ~12 g protein🌱 Vegan

You need

  • 1 cup sprouted moong (from about 40 g dry)
  • ½ each onion, tomato, cucumber, chopped
  • 1 green chilli, coriander
  • 1 tbsp roasted peanuts
  • Lemon juice, chaat masala, black salt

Method

  1. Rinse the sprouts well in clean water.
  2. Add the chopped vegetables, chilli and peanuts.
  3. Season with lemon, chaat masala and black salt, toss and eat fresh.
To sprout at home: soak moong for 8 hours, drain, wrap in a damp cloth and leave for 12–24 hours until tails appear. Children, older adults and pregnant women may prefer sprouts briefly blanched in hot water from a kettle.

Recipe 03

Dahi poha (no tadka)

You need

  • 1 cup thick poha
  • 1 cup thick curd + 2 tbsp milk
  • ½ tsp grated ginger, 1 green chilli
  • ¼ cucumber, grated
  • 2 tbsp pomegranate, coriander
  • 1 tbsp roasted peanuts, salt

Method

  1. Rinse the poha in a sieve and let it soften for 5 minutes.
  2. Whisk curd with milk, salt, ginger and chilli.
  3. Fold in the poha and cucumber. Top with pomegranate, peanuts and coriander.
Tip: A South Indian classic (mosaru avalakki) that’s naturally cooling. Add a pinch of sugar for kids.

Sabja or chia mango pudding

You need

  • 2 tbsp chia seeds, or 1 tbsp sabja (basil) seeds
  • 1 cup milk
  • 1 tsp honey
  • ½ mango or a handful of berries
  • A few chopped nuts

Method

  1. Chia: stir into milk with honey, rest 5 min, stir again and refrigerate overnight.
  2. Sabja: soak in ¼ cup water for 15 min until they swell, then add cold milk and honey.
  3. Top with fruit and nuts.
Tip: Sabja is cheaper, sold at most kirana stores and ready in 15 minutes. Chia gives a thicker pudding.

Banana peanut butter smoothie

You need

  • 1 ripe banana
  • 1 cup cold milk (or soy/almond milk for vegan)
  • 1 tbsp peanut butter
  • 2 tbsp rolled oats
  • 2 soft dates, pinch of cinnamon

Method

  1. Add everything to the mixer jar.
  2. Blend for 45–60 seconds until smooth.
  3. Drink right away.
Tip: Freeze sliced ripe bananas the night before for a thick, cold, milkshake-like smoothie without ice.

Bombay chutney sandwich with paneer

  • 2 slices whole wheat bread

You need

  • ¾ cup (150 g) hung curd or Greek yogurt
  • 1 tsp honey
  • 1 cup chopped fruit (kiwi, apple, banana, pomegranate)
  • 2 tbsp muesli or chopped nuts
  • 1 tsp seeds (flax, pumpkin)

Method

  1. Stir honey into the curd.
  2. Layer curd, fruit and muesli in a glass, then repeat.
  3. Finish with seeds. Eat right away so the muesli stays crunchy.

  1. Whisk sattu into a little water to make a smooth paste.
  2. Add the rest of the water, lemon and spices, and whisk well.
  3. Stir in onion, chilli and mint. Drink chilled.
Tip: Sattu is roasted gram flour, so it’s already cooked. It’s filling, cheap and especially good before a summer commute.
